The area of San Miniato is one of the only three areas where the true white truffle (hypogeum mushroom) can be found, together with Alba in Piedmont and Acqualagna in Marche.
Contrary to what we might think, the truffle can be found here all year round but it changes variety depending on the season (the white one goes more or less from September to January) presenting different flavors. The truffle can be found from 2 to 40 cm under the ground.

The white truffle of San Miniato's hills is the Tuber Magnatum Pico, 'Food of the Kings', which is found, a few centimeters deep, in a limited number of areas favored by nature.
Among these, the one of San Miniato holds a series of records such as the discovery of the biggest truffle, of 2.520 grams, given in 1954 to the American President Truman.
